The Borgo's gastronomic offering is wide and covers all hours of the day.

At Borgo dei Gatti, gastronomy has three places, three identities and one soul.

La Corte, Olmo and La Bütega each tell the story of a different moment of the day and a different way of gathering around the table, yet all three share the same vision.

Giving shape and coherence to this vision is Executive Chef Fabrizio Ferrari, whose approach to the Borgo’s cuisine begins with a simple principle: technique should always serve flavour, never overshadow it. Ingredients come first, together with seasonality, a deep connection to the territory and those distinctive, familiar flavours that belong to our collective memory.

This philosophy runs through the entire Borgo, taking on a different expression in each place. At La Corte, it finds its most refined and contemporary form; at Olmo, it becomes more immediate and convivial, centred around the simple pleasure of sharing a table; at La Bütega, it returns to the pleasure of simple, good things — breakfast, lunch, a platter to share or a glass of wine enjoyed without hurry.

The gestures change, the dishes change, the occasions change. The idea of cuisine does not: distinctive, precise, deeply rooted in its surroundings and able to evolve without losing sight of where it comes from.
